And ever wonder what to do with that leftover cellulose plant fibers?<br />
I mean sure, throwing it in your yard or compost pile are great ideas, but if you think about it, you're throwing out a good amount of nutrients and ruffage you could easily add to your diet.<br />
"Waste not want not!"<br />
Here is a simple recipe I used to make some awesome pulp crackers I used with leftover veggie juice pulp!<br />
<br />
<b>Juice Pulp Crackers</b><br />
3 cups of juice pulp<br />
1/2-2/3 cup garbanzo flour<br />
1/4 cup chia seeds<br />
splash of water<br />
1/2 tsp fennel Seeds<br />
1/4 tsp dried thyme<br />
Salt and Pepper to taste<br />
<br />
1. Preheat the oven to 425.<br />
2. Mix ingredients in a bowl until paste consistency is produced.<br />
3. Oil baking sheet.<br />
4. Spread pulp dough to thin layer on the sheet.<br />
5. Bake 30-40 minutes until crispy, cut into squares and bake again for 5-10 minutes if needed. (Sometimes it doesn't evenly bake to the middle part, so this is when you would cut it and bake again thoroughly.)<br />

Kimchee/"Kimchi" specifically is an amazing source of a lot of beneficial nutrients besides the amazing life it creates, simply because of it's ingredients.<br />

<li>Cabbage (Nappa cabbage, AKA Won bok, great for digestion and metabolism.)</li>
<li>Garlic. Seriously. Lots of garlic. (Good for high cholesterol, fungal problems, fever, aches.)</li>

Seriously, if you saw my stash that I have in my room you would be worried for me. BUT, I don't care what you think! Chocolate has always been there for me when no one else has… haha.<br />

So I got inspired, because I absolutely LOVE this vegan chocolate pudding from my local health-food store that they make in the deli, using tofu. However, I have an issue with using too much soy (everything in moderation), so I tried to maneuver a soy-free version which is actually a million times better!! But before I start with the recipe, I'd like to talk about a couple of the ingredients I featured in this recipe.<br />
<br />
<i><b>Arrowroot </b></i>is the EASIEST thing for your body to digest. If you are suffering from tummy problems, dissolve a couple tablespoons in some warm apple juice and you're good to go! It's also a better alternative to corn starch, which as you know is usually GMO produced, and a good source of the following: <i>folate, b-complex vitamins, copper, iron, manganese, phosphorus, magnesium, zinc, potassium, and also has a little bit of protein! </i><br />
<i><br /></i>
<i><b>Cacao</b> </i>is the original chocolate. And NO I'm not talking about that processed milk chocolate crap! I'm talking about the raw version, without milk, sugar, cream, etc. It is an absolutely fabulous way to make you happy, and yes I'm serious because it's loaded with the amino acids tryptophan and tyrosine to boost serotonin/epinephrine/norepinephrine levels and reduce cortisol in the body (stress) to leave you feelin good! The magnesium content will also aid in PMS symptoms, such as cramps. It is also a great source of fiber and antioxidants.<br />
<br />
Okay onto the recipe!<br />
<br />
<b><i>Vegan Raw Cacao Avo Pudding </i></b><br />
2 & 1/4 cups of unsweetened almond milk<br />
1/2 cup arrowroot<br />
1/2 cup raw cacao powder<br />
~1/2 cup agave (depending on how sweet you want it)<br />
1/2 of an avocado<br />
2 tbsp coconut oil<br />
1 tsp vanilla<br />
<br />
1. Dissolve arrowroot in almond milk in a medium sized pot on high heat, whisking quickly until thick.<br />
2. Combine raw cacao agave, and vanilla. Keep whisking until its a thick, rich consistency.<br />
3. Let it cool to room temperature.<br />
4. Blend/process with the avocado and coconut oil.<br />
5. Chill!<br />

The part I don't like about baking is having to follow rules. You can't just throw a little bit of this here and there as you go, tasting it all of the way, but instead have to mix up everything in sequence using measuring cups (Hate em!) and hope that it all turns out okay.<br />
If it doesn't, then you're dunzo and you just wasted a bunch of ingredients.<br />
<br />
However, I've come to find that not using eggs, butter and regular sugar makes it a lot easier (for me, anyway). So I altered a generic vegan "Apple Sauce Cake" recipe into my own by using coconut oil, chia seeds and flavor twist.<br />
<br />
<b><i>Easy Vegan Apple-Chia Cake </i></b><br />
1/3 cup coconut oil (liquid)<br />
1/2 cup of agave<br />
1 & 1/2 cup unsweetened apple sauce<br />
2 cups of whole wheat flour<br />
1/2 tsp salt<br />
3 tbsp chia seeds<br />
1 & 1/2 tsp baking soda<br />
1 tsp cinnamon<br />
1 tsp nutmeg<br />
1 1/2 tsp ginger (fresh or powder)<br />
1 organic apple<br />
<br />
<b><i>Lemon-Apple Glaze</i></b><br />
Juice of one lemon + 1/2 tbsp lemon zest<br />
2-3 tbsp apple sauce<br />
1/2-3/4 cup of sugar (depends on how much absorbs)<br />
***You don't want this sauce too thick, but also not too runny. So measure on your judgement!<br />
<br />
<br />
1. Preheat oven to 350 degrees.<br />
2. Mix oil, sugar and apple sauce.<br />
3. Combine dry ingredients and add slowly to wet mixture and beat until smooth pancake-like batter.<br />
4. Add chia seeds and mix.<br />
5. Grease a deep cake dish (I used coconut oil spray).<br />
6. Skin and thinly slice apples into half moon shape.<br />
7. Lay one layer of apples, in a spiral fashion in the dish.<br />
8. Pour half of the batter, and layer apples again (spiral).<br />
9. Pour the rest of the batter, and spiral again on top.<br />
10. Bake for 45-50 minutes.<br />
11. Pour glaze on top and serve!<br />

~1/3 olive oil (depending on how smooth you like it)<br />
1/2-1 whole lemon (some people like it more lemony, like me so I use about a whole lemon)<br />
1 Tbsp cumin<br />
1 tsp garam masala<br />
2 heaping tbsp of tahini<br />
fresh parsley (optional)<br />
s&p to taste<br />

<i>1. Add garlic cloves with olive oil and lemon in a food processor, and pulse until garlic is minced.</i><br />
<i>2. Add spices, and parsley if you want to add it.</i><br />
<i>3. Drain beans and rinse (this is very important to get all of the preservatives and salt off the beans). Then incorporate into the mixture and blend on high until a thick paste.</i><br />
<i>4. Add tahini, and and then salt and pepper. Make sure to taste it as your going!</i><br />
<i>5. Blend into a thick paste. Garnish with a drizzle of olive oil and paprika.</i><br />

In this post, I feel the need to give a little shout out to Turmeric. </div>

It's used in a lot of Indian/Thai cooking, curries and curry powder, rice dishes, dyes, and even yellow mustard. It's reason why yellow mustard <i>is</i> yellow.</div>
<div class="separator" style="clear: both; text-align: left;">
It grows like ginger does (same family), as a plant but is harvested for the rhizomes. The plant itself will grow and grow for a few months, and when it dies off, you'll be left with weird finger-like roots popping out of the ground and THIS is what you want.</div>

As far as the benefits go, there are almost too many to list. The main reason I use it is for joint pain, when I had a problem with my leg after running with the wrong shoes, and when I have a cold.</div>

The healing property is the <i>curcumin</i>, but it also contains other minerals like iron, potassium, and others.</div>

It reduces inflammation -- hence, the use for joint pain. Therefore if you have issues with arthritis, cystic fibrosis, IBD, acne, etc.</div>

2 heaping tablespoons of arrowroot, dissolved in a small bowl with 1/4 cup hot water. Mix the two together until the arrowroot clumps are completely dissolved into a glue-like milk.</div>

Preheat oven for 400 degrees F, mix together dry ingredients and then chop up the cold butter into cubes. Mix/massage in butter until it is mixed completely with dry ingredients and then add olive oil, forming a dough. If you feel like this mixture is way to dry to pack into scone sized balls, add almond milk (however much is needed to create a solid crumbly dough). Next, add blueberries and mix gently with hands.</div>

Line a baking sheet with parchment paper and put scones down. I sprinkled mine with a little bit of hemp seeds and dusted cinnamon on top. I'm sick of these fad diets. Like low carb/no carb/no sugar/candida diet/gluten free/grain free/blahdeeblah. </div>

The key to maintaining good health (including an ideal weight) is to not adopt a temporary diet that "worked for that lady on the internet" but to adopt <b>healthy choices when it comes to food. </b><br />

Listen to your body. If you react to gluten, don't eat it! If you don't, enjoy that scone from the local bakery you've been eyeing in the window the past week. Everything in moderation, right?<br />

Don't restrict yourself from the things you love, however you probably shouldn't eat a pint of ice cream every night... Healthy mind, healthy body :)<br />

Bake at 375 for about 15 minutes or so, or until light gold brown. My oven is kind of funky so I had to use convection bake for about 14 minutes.</div>

It's organic and with EVOO so it's not as pungent and easier to consume than pure oregano oil.</div>

1. Boil a large pot of water with a lot of white sugar. (I'd say about 1/4-1/3 cup to 4 cups of water.)</div>

2. Once sugar is dissolved, steep 3 tea bags in the large pot. (a combination of black and green, one or the other. As long as there is caffiene and it is PLAIN TEA with no flavorings or additives.) </div>

3. Keep the tea bags in the pot until it cools. You want this tea STRONG!</div>

4. Pour into a large glass jar. Make sure it's GLASS and not metal or plastic. Kombucha likes glass the best.</div>

5. Add the scoby and a little bit of plain raw kombucha. You can also buy a bottle of plain raw kombucha and add it to your sugary tea to make your own scoby! That's how I started.</div>

6. Cover the top with a towel and rubber band so it can breathe.</div>

7. Let it sit for 1-2 weeks in a dark-ish place and you've got yourself homemade kombucha!</div>

Cut tofu and pat dry, mix the ingredients above (just a little bit of everything) so that the tofu slices are fully covered in a plastic bag. Marinade for about 2 hours.<br />

Massage chopped cabbage with salt and vinegar untill fully saturated and the red color starts to bleed. Grate fresh ginger and garlic and chop up cilantro and spinach. Stir everything up, add yogurt and shoyu. If needed, add agave.<br />

All you need is a toaster oven, 1 can (no salt) garbanzo beans drizzled in lightly in olive oil, balsamic, salt/pepper. I roasted it @450 convection bake. Watch until a few start to pop, and the skin is somewhat crunchy. </div>

<i>Step 1</i> sautee onion and tempeh in olive oil until onions are somewhat translucent and tempeh is a little bit browned. (You can also add garlic at this step.) </div>

<i>Step 2</i> add white wine, and cook down. Once wine is cooked down, add a little bit of water and let it steam (put the lid on), because you want the tempeh to be fully cooked.</div>

<i>Step 3</i> add lemon grass, and ginger. Immediately add the coconut milk and pureed pumpkin. Let it simmer for about 5-10 min on med/low heat. The longer the better, so you can even go up to 20 if you let it go on low heat.</div>

<i>Step 4</i> Add all spices, and let it simmer again, just about 5 minutes this time. Once the 5 minutes are up, add some fresh squeezed lime. It's a perfect compliment!</div>

<i>Step 5</i> Add salt/pepper to taste. Once it's to your liking, the last step is to add the fresh kale. Make sure this is the absolute last thing you do because you don't want the kale to turn brown. Keeping it green guarantees maximum nutritional content. You don't want to kill it with heat.</div>

**I used honey to even out the saltiness of my miso. This isn't necessary if your miso isn't super salty like mine was.</div>

First I cut the tofu into small, thin squares. You don't have to cut it like this, it's just how I did it. (It will taste the same cut into any fashion!)</div>

Next I blanched the kale in some hot water, and immediately put it into ice cold water. It's important to not expose it to the hot water for too long because it will loose it's nutrients and become brown and gross. Putting it into ice water directly after will stop the cooking process.</div>

Once I toweled off the kale from any excess water, I put it in a mixing bowl with the tofu, added the miso, tahini, flax oil, and purple cabbage. </div>

How can you eat healthy and conveniently, when you're studying all the time (not having a life)?<br />
It's a sad dilemma.<br />
The best thing to do is to eat to FEED YOUR BRAIN! Stay clear from processed food, sugar, and especially... excessive caffeine.<br />

Dark leafy greens are loaded with vitamins (A, B6, C and K) and minerals (iron, calcium, potassium, folate, and magnesium). Kale is a great source of these, along with carotenoids and flavonoids which are antioxidants that slow aging, support a healthy immune system, and most importantly, assist in healthy brain function! Eating an abundance of these during studying will help you from getting sluggish and with help you keep alert so you can retain information better!<br />

Another great thing to consume for "brain food" are healthy fats (omegas 3, 6 and 9). Your brain is made of mostly fat, and needs more of what it's made of to keep functioning properly! Not to confuse processed fats and oils (avoid butter, lard, shortening, and vegetable oil/corn oil), "healthy fats" are in foods such as nuts, salmon, eggs, and avocados. Eating these healthy fats come with a load of health benefits besides healthy brain function, but consuming healthy fat with dark leafy greens assists in better nutrient absorption.<br />

I packed myself some apple cinnamon bars from the bulk section at my local health food store, some tahini, and the toasty spiced almonds. Travels easily, and doesn't have to stay cold or anything. Especially when your bag is full of text books and notes. </div>
